Keeping it in the family: The birth of Mexigo

First and foremost, we’re a family business – our core unit is made up of two brothers, John and Thomas, Mum and manager Rosslyn, and Dad and business owner Alan. Our chefs are friends of the family, and we’ve all know each other from way back. It’s safe to say we’re a pretty tight knit familia!

The inspiration for Mexigo came from Thomas’ passion for Mexican cuisine that culminated in a trip to New York four years ago. When Thomas visited a popular chain Tex-Mex fast food restaurant, with good food and fresh ingredients, he knew it was something he could bring back with him to the UK.  Something that’s so well known and delicious as Mexican food in the states was definitely going to make its way across the Atlantic, so why not throw his own hat into the ring?

After all, he was already know for his cooking skills – (passed down from mum!) as well as his themed party nights such as Fajita Fridays. Thomas got mum Rosslyn (known as Roz) involved, which was a top decision, as she already has extensive experience and knowledge of the hospitality services.

Once he returned to the UK he put the idea for Mexigo to his dad, already a business owner in Anstruther, who was at first skeptical of the success of a Mexican take away restaurant would have in the Fife area. But after some initial digging they realised that the market of Mexican-style restaurants, had experienced growth in the last 2 years that was so rapid, that it could give speedy Gonzalez a run for his money. With the knowledge that the market was indeed there, they set out looking for ideal locations for our burrito bar.

After looking at all the options, St Andrews was decided upon, and what better location, than where there are not only thousands of students looking to try something new, but where a handful of the students come from the USA, where Mexican food is prevalent.

If you build it they will come, and they have.

We use the freshest ingredients, and we prepare all of our food in front of you – nothing is simply heated up in an oven or a microwave and slapped on a plate. We’re all passionate about the food we create, and we want that to shine through to the final product.
